Ingredients

• 30 ml cooking oil
• 600 g packet frozen chicken fillets, thawed and diced
• 1 onion, finely chopped
• 2 cloves of garlic, crushed
• 410 g can whole peeled tomatoes, undrained, chopped
• salt and pepper to taste
• 200 g (250 ml) raw rice
• 500 ml chicken stock (one stock cube)
• 1 green pepper, seeded and diced
• 100 g button mushrooms, wiped and sliced
