Brie and Pecan-Stuffed Apples

Ingredients

• 3 slices bacon, about 1/4-inch (1/2-cm) thick, cut into small pieces
• 1 onion, chopped
• 1 tablespoon (15 ml) olive oil
• 2 cloves garlic, finely chopped
• 1/2 cup (125 ml) chicken broth
• 1/2 cup (125 ml) bread, diced
• 1/4 lb (115 g) brie cheese, rind removed, cut into cubes
• 1/4 cup (60 ml) pecans, toasted and chopped
• 2 tablespoons (30 ml) chopped parsley
• 4 McIntosh or Cortland apples
• Salt and pepper
