• 175g light brown soft sugar , plus 1 tbsp for sprinkling
• 200g self-raising flour
• 1 tsp bicarbonate of soda
• 2 tsp ground cinnamon
• 1½ tsp ground ginger
• 2 eggs
• 150ml sunflower oil
• 1 orange , zested
• 2 tsp vanilla extract
• 175g Morrisons Market Street carrots , peeled and grated
• 50g raisins
• 50g walnuts , roughly chopped
• 100g full-fat soft cheese
