Turmeric, Coconut & Spinach Skillet Chicken - Bird and Barrow

Ingredients

• 500g Bird & Barrow Chicken Thigh Fillets
• 3 garlic cloves, finely diced
• 2 tsp finely grated ginger root
• 1 tsp ground turmeric
• 1 tsp ground cumin
• ½ tsp garam masala
• ½ tsp smoked paprika
• 1 cup chicken stock
• 1 cup coconut cream
• 1 rounded tsp sugar
• Salt & pepper to taste
• 250g frozen spinach, mostly thawed, squeezed of most liquid
• Squeeze of lime or lemon juice
• Olive oil as needed
