Oven baked sausages with vegetable and tomato sauce | Frylight

Ingredients

• Frylight Cooking Spray
• 8 pork sausages
• 1 onion, thinly sliced
• 1 clove garlic, minced
• 400 g can chopped tomatoes 
• 150ml white wine 
• 150ml beef stock 
• 250g new potatoes, halved 
• 1 red pepper, seeded, sliced
• 1 courgette, halved lengthwise, sliced
• 12 cherry tomatoes
• 2 carrots, sliced          
• 1 tsp dried oregano
