Ingredients

• 1 pound pork sausage
• 4 tablespoons salted butter
• 1 large leek, sliced (white and light green part only)
• 1 cup celery, chopped
• 1 tablespoon garlic, minced
• 1 tablespoon fresh sage, chopped
• 1 tablespoon fresh thyme, chopped
• 2 tablespoons fresh rosemary, chopped
• 1 teaspoon fennel seed
• ½ teaspoon black pepper
• 2 large eggs
• 2 cups low sodium chicken broth

• 1 pound day old Italian bread, cubed*
