Ice Cream Sundae Cupcakes - Cupcake Fanatic

Ingredients

• --1/2 cup granulated sugar
• --3/8 cup plus 1 tablespoon all-purpose flour
• --1/8 cup plus 1 tablespoon unsweetened cocoa powder (not dutch-processed)
• --3/8 teaspoon baking powder
• --3/8 teaspoon baking soda
• --1/4 teaspoon salt
• --1/2 egg, room temperature (whisk the whole egg, then measure out half)
• --1/4 cup sour cream, room temperature
• --2 tablespoons vegetable oil
• --1 1/2 teaspoons vanilla extract
• --1/4 cup boiling water
• --vanilla ice cream (about 1 1/2 quarts), softened
• --whipped cream
• --fudge sauce or chocolate sauce
• --sprinkles (we used chocolate jimmies)
• --maraschino cherries
