• 1 carrot
• 1 sprig of thyme
• 1 small cinnamon stick
• 3 cloves
• 200 ml white wine
• 150 ml Balsamico Bianco
• 200 g plain flour
• 200 g breadcrumbs
• 2 eggs
• 4 tbsp Extra Virgin Olive Oil (plus enough for frying)
• salt and pepper
