Potato and Boursin Frittata -

Ingredients

• 8 large eggs
• 1/4 tsp. salt
• 1/2 tsp. pepper
• 1/4 cup olive oil
• 2 cups frozen shredded hash brown potatoes (from a 16 oz. bag)
• 1 bunch green onions, chopped (about 2 cups)
• 1 (5 oz.) package Boursin cheese with herbs and garlic, chilled
• smoked salmon, prosciutto or ham for serving (optional)
