Ingredients

• 2 medium fennel bulbs, sliced or shaved
• 1 ripe avocado
• 2 tangerine in slices
• 1/4 cup of pistachios
• 1 handful of fresh mint leaves
• 1/4 cup of extra virgin olive oil
• 1/4 cup of tangerine juice
• 1 TBSP of dijon mustard
• 1TBSP of apple cider vinegar
• Salt and pepper to taste
