Lemon Pistachio Cake - Palestine In A Dish

Ingredients

• 2 lemons, zest and juice (about ⅓ cup lemon juice)
• 1 cup granulated sugar
• 1 ½ all-purpose flour (If made with almond flour use 2 cups of almond flour)
• 1 teaspoon baking soda
• ¼ teaspoon salt
• 2 eggs
• 1 teaspoon vanilla
• ½ cup olive oil
• ½ cup of yogurt (skip the yogurt if using almond flour)
• ½ cup of roughly chopped pistachios (and more for decorating)
• 1 cup of heavy cream whipped.
