Tamale Chili

Ingredients

• 3 Tbsp. olive oil
• 1 large or 2 medium onions, diced
• 4 bell peppers, diced
• 1 lb. ground turkey
• Salt and pepper
• 1 jar of salsa (15 oz.)
• 19 oz. red enchilada sauce
• 14-15 oz. diced tomatoes
• 2 c. broth
• 3 Tbsp. taco seasoning
• 1 1/2 Tbsp. chili powder
• Zest of 2 limes
• Juice of 2 limes
• 3/4 c. cornmeal
• 1-2 c. frozen corn
• 1-2 handfuls of cilantro, chopped
