Ingredients

• 3 large tomatoes, roughly chopped
• 2 eggs, beaten
• 2 cloves minced garlic
• 2 stalks spring onions, white and green parts separated, finely chopped
• 1 tbsp oyster sauce
• Pinch of salt
• 1 tsp medium curry powder
• Handful of spring onions, finely chopped
• Handful of fresh coriander, finely chopped
• freshly baked sourdough bread, lightly toasted
