• 2 bundles of Thai rice noodles
• 225g smoked tofu
• 1 red onion
• 1 red pepper
• 1 courgette
• 1 carrot
• 2 garlic cloves
• A thumb of ginger
• 1 tbsp mild curry powder
• 2 tbsp Thai sweet chilli sauce
• 1 lemon
• 1 ltr cold water
• 1 tbsp olive oil
• 2 tbsp cold water
• Sea salt
• Freshly ground pepper
