  • 1 cup (120g) dried cranberries*
  • 1 cup (120g) dried apricots, chopped*
  • 1 cup (148g) candied lemon peel*
  • 1 3/4 cups (283g) candied red cherries
  • 3/4 cup (170g) brandy, rum, or whiskey; or apple juice, plus extra to brush over the cakes when they come out of the oven
  • 16 tablespoons (227g) unsalted butter, at room temperature, at least 65°F
  • 1 3/4 cups (347g) granulated sugar
  • 1/4 cup (78g) light corn syrup
  • 2 teaspoons baking powder
  • 1 teaspoon table salt
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon King Arthur Fiori di Sicilia, optional
  • 5 large eggs, at room temperature
  • 3 3/4 cups (450g) King Arthur Unbleached All-Purpose Flour
  • 1 cup (227g) milk, at room temperature
  • 2 cups (227g) diced pecans or walnuts, optional
  • 3 cups (340g) confectioners' sugar, sifted
  • 1/8 teaspoon table salt
  • 1/4 cup (57g) water
  • 1/8 teaspoon King Arthur Fiori di Sicilia
