Ingredients

• 1 tablespoon extra virgin olive oil
• 1 large onion, chopped
• 3 cloves garlic, chopped
• 12 ounces pre-cooked sausage links, cut into bite-sized pieces
• 1 15-ounce can of corn, drained, or 1½ cup, frozen
• 1 teaspoon dried oregano
• 2 cups winter squash, peeled and cubed
• 1 cup chicken or vegetable stock
• 1 16-ounce jar salsa verde
• Salt to taste
• 1/2 cup cilantro, chopped
• 1 large jalapeño, thinly sliced
