Ingredients

• 3 tablespoons olive oil
• 1 large red pepper, halved, deseeded and diced
• ½ small onion, very finely chopped
• ½ cup eggplant, diced
• 1 plum tomato, halved, seeded and chopped
• 1 clove garlic, chopped
• Generous pinch of dried chile flakes
• 2 tablespoons ricotta cheese
• ¼ cup blanched almonds, diced
• 2 tablespoons extra-virgin olive oil
• ¼ to ½ cup packed basil, leaves only (to taste)
