'What's at the bottom of the fridge' green pasta - Better Homes & Gardens Australia
Green pasta is the best thing to make when you've got heaps of leftover vegies. Here's how Colin makes his recipe.
Ingredients
- 1 bunch broccolini, roughly chopped
- 4 kale or silverbeet leaves, roughly chopped
- 2 stalks celery, roughly chopped
- 2 cups baby spinach or rocket
- 2 cloves garlic
- 100g parmesan or other hard cheese (pecorino or manchego will also work well), coarsely grated
- 1/2 cup roasted almonds, chopped
- 1/2 cup olive oil, plus extra
- Juice of 1 lemon
- Sea-salt flakes and cracked black pepper, to taste
- 500g packet linguine
- Fresh basil, tarragon or flat-leaf parsley, to garnish
- Goat’s cheese or extra grated parmesan, to serve
