- 500 grams medium beetroot, 3 medium peeled and thickly sliced
- 450 grams haloumi, sliced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon ground cumin
- 1 cup dried couscous
- 1 cup boiling water
- 400 grams lentils, drained and rinsed
- 2 tablespoons mint leaves, fresh chopped
- 1/2 cup caramelized onion
- 1/4 cup red wine vinegar
- 1 bunch rocket, large bunch (see notes)
- 1/3 cup hazelnuts, skinless and toasted and roughly chopped
- Fresh mint leaves, to serve
