  • 1 cup light brown sugar
  • 8 tablespoons salted butter, cut into pieces
  • 1/4 cup heavy cream
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cinnamon
  • Fleur de sel (or coarse sea salt) for topping
  • 1 cup all-purpose flour
  • 2/3 cup light brown sugar
  • 1/3 cup granulated sugar
  • 1 stick (8 tablespoons) cold unsalted butter, cut into pieces
  • pinch of sea salt
  • 1 8-ounce block cream cheese, room temperature
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ground cloves
  • 1 cup toasted walnuts, roughly chopped
  • 2 cups Granny Smith apples, peeled cored and diced (SEE NOTE)
  • 12 tablespoons unsalted butter, melted and cooled
  • 1 1/2 cups light brown sugar, packed
  • 2 large eggs, beaten
  • 1 tablespoon + 1 teaspoon vanilla extract
