Israeli Fennel, Kohlrabi and Green Onion Salad – Harmony Valley Farm

Ingredients

• 2 medium kohlrabi, peeled and sliced thinly (about 4 ½ cups)
• 2-3 fennel bulbs with stalks
• 4 celery stalks
• 1 bunch scallions, cut on the diagonal (lower onion and green tops)
• Juice from 3 large lemons (about ⅔ cup)
• 2 Tbsp olive oil
• Salt, to taste
• Optional: Crumbled feta cheese, Sliced olives, Sliced Avocado
