Ingredients

• 2 x 225-300g skinless fillets of salmon, pin bones removed
• Sprigs dill
• For the spinach stuffing
• 2 knobs butter
• 175g spinach
• 2 shallots, finely chopped
• 25g raisins
• For the potatoes
• 4 large potatoes, such as King Edward, very thinly sliced
• 4 cloves garlic, sliced
• 3 tbsp olive oil
• To serve
• 150ml carton soured cream
• 2 tbsp snipped dill
• 1 bunch or 8 spring onions, ends trimmed, halved lengthways
