Ingredients
- 2 x 225-300g skinless fillets of salmon, pin bones removed
- Sprigs dill
- For the spinach stuffing
- 2 knobs butter
- 175g spinach
- 2 shallots, finely chopped
- 25g raisins
- For the potatoes
- 4 large potatoes, such as King Edward, very thinly sliced
- 4 cloves garlic, sliced
- 3 tbsp olive oil
- To serve
- 150ml carton soured cream
- 2 tbsp snipped dill
- 1 bunch or 8 spring onions, ends trimmed, halved lengthways
