This is the drink of the summer - sweet and tart rhubarb syrup, gin, and apple, topped up with inch's Apple Cider for this beautiful peach colour.

- 1kg forced rhubarb, diced
- 1 cooking apple, diced
- 1l water
- 400g granulated sugar
- 2 sprigs fresh rosemary
- 150ml gin
- 300ml syrup
- 440ml Inch's
- Apple slices and rosemary, to garnish
- Ice
- 200g sugar
- 250ml water
- 2 stalks rhubarb, peeled
