- Balsamic Beet Puree and Roasted Golden Beets
- 1 red beet
- 1 bunch baby golden beets, with tops
- ½ cup extra-virgin olive oil, divided
- ¼ cup balsamic vinegar
- Grilled Cheese
- 8 slices rye bread
- 12 ounces fresh goat cheese
- 1 Chioggia beet, peeled and thinly sliced (8 slices)
- 4 tablespoons unsalted butter, for finishing
