Ingredients

• 10oz box frozen spinach
• 8oz mushrooms
• 1 clove garlic
• 1 shallot
• 1/4 tsp salt
• 1 tbsp oil
• 2oz crumbled feta cheese
• 4 eggs
• 1/4 cup grated Parmesan
• 1/4 tsp pepper
• 1 cup half and half
• 1/2 cup shredded mozzarella
