Fancy mince on toast with chilli, onions and egg

Ingredients

• 2 tablespoons olive oil
• 400 grams beef mince
• 2 carrots, grated
• 1 bay leaf
• 1/4 cup red wine
• 400 grams tin chopped tomatoes
• 1/2 teaspoon sea salt and pepper
• 2 medium onions, thinly sliced*
• 1 tablespoon butter or oil
• 1-2 red chillies, thinly sliced
• 1 fried egg per person and ciabatta slices, to serve
• finely chopped chives, to garnish
