White Bean and Turkey Broth - Rodney Strong

Ingredients

• 1 tbsp olive oil
• 1 medium shallot, thinly sliced
• 2, 14oz cans white beans, drained
• 1/2 tsp cumin
• Pinch of salt and black pepper
• 2 tsp minced garlic
• 1 quart veggie or chicken broth
• 1 ear of corn
• 1 1/2 cups chopped kale
• 2-3 cups chopped or shredded leftover turkey
• Parsley for garnish
