2829 Applegate - French Onion Soup

Ingredients

• 5 Pounds total for onions total, see the ratio I use below:
• 4 Large yellow onions
• 2 Large sweet onions
• 6 Tablespoons salted butter, I like Tillamook.
• 2 Sprigs of fresh thyme
• 2 Bay leaves
• ¾ cups dry white wine, such as Chardonnay or Viognier
• 4 Cups of beef broth, high quality is key
• 1 1/2 Cups chicken broth
• 1 Teaspoon Worcestershire sauce
• Salt/Pepper, to taste
• 1 baguette
• 3 Tablespoons olive oil (optional)
• 6 slices Gruyere cheese see below for substitution options
