• 2 tbsps unsalted butter
• 2 tbsps extra virgin olive oil
• 1 small onion finely minced
• 1 1/2 cups Italian risotto rice, preferably vialone nano or other arborio
• 1/2 cup dry white wine
• 8 cups homemade chicken or vegetable stock
• 1/2 cup grated parmesan cheese plus a few shavings to finish
• 2 tbsps softened unsalted butter to finish the rice
