- 50 g blond vergeoise sugar
- 40 g dark muscovado sugar
- 25 g fine caster sugar
- 1 egg, medium size
- 200 g all purpose flour
- 1/2 tsp baking soda , about 3g
- 1 Tbsp cornstarch, about 10g
- pinch of salt
- 180 g dark chocolate, roughly chopped, I used caraïbe from valrhona
- 100 g pecans, lightly roasted and roughly chopped
