Ingredients

• 450g white potatoes (use 3 or 4 of similar size), unpeeled
• 1 aubergine
• 1 tbsp olive oil
• 1 x 250g pack lamb mince
• 2 medium onions, finely chopped
• 2 garlic cloves, crushed
• 1 tsp dried mint
• 2 tsp ground cinnamon
• 1 tbsp tomato purée
• 2 x 400g cartons Basics chopped tomatoes
• 40g butter
• 40g plain flour
• 300ml milk
• A pinch of ground nutmeg
• 1 medium egg, beaten
• 15g Parmesan, finely grated
