Ingredients
- 80g (1 cup) fresh breadcrumbs
- 1 garlic clove, roughly chopped
- 15g (1/2 cup) roughly chopped fresh flat-leaf (Italian) parsley
- finely grated zest from 1 lemon
- sea salt
- freshly ground black pepper
- 2 tablespoons olive oil
- 4 thick (about 3cm) white fish fillets
- To serve:
- 50g baby English spinach leaves
- 4 lemon wedges
- garlic mashed potatoes (see another of my recipes)
