Ingredients

• Carrot Cake:
• 2 ½ cups sugar
• 1 cup canola oil
• 4 eggs, separated
• 5 Tbsp hot water
• 2 ½ cups all-purpose flour
• 1 tsp cinnamon
• 1 ½ tsp baking powder
• ½ tsp baking soda
• ¼ tsp salt
• 1 tsp nutmeg
• 1 tsp cloves
• 1 ½ cups grated raw carrots
• Optional: 1 cup finely chopped pecans
• Vanilla Glaze:
• 2 cups sifted confectioners’ sugar
• 1 Tbsp butter softened
• 1 tsp vanilla
• 2-3 Tbsp milk
