• 1 package Premio Premio’s Sweet Italian Sausage
• 3-4 tablespoons olive oil
• 1 large carrot, diced
• 1 medium onion, chopped
• 3 cloves garlic, minced
• 8 ounces crimini mushrooms, quartered
• 1 (15 ounces) can diced tomatoes with juice
• 2 1/2 cups chicken broth/stock
• 1 cup Israeli couscous
• 1 head fresh broccoli, florets only
• 5-7 pieces sundried tomatoes soaked in water, julienned
• Parmesan cheese, for sprinkling
• Salt & pepper, to taste
