• 1/4 large white onion, finely chopped
• 1 clove garlic, pressed
• 3 red potatoes, unpeeled, chunked
• 1 medium zucchini, chunked
• 2 cups veggie pasta, any shape
• 1 red bell pepper, chopped
• 1 yellow bell pepper, chopped
• sea salt & freshly cracked pepper to taste
