Simple Holiday Pickled Pike
You might associate pickled northern pike with something from yesteryear, but take it from us, there’s nothing old-time about it – still tastes great today –
Ingredients
- North-central Zone: 10 (not more than 2 over 26”, all from 22-26” must be immediately released)
- Northeast Zone: 2 (not more than 1 over 40” in possession, all from 30-40” must be immediately released)
- Southern Zone: 2 (minimum size 24”)
- 1.5 lb Pike
- 1 cup Pickling Salt (or regular salt if not available)
- 1 qt Water
- 4 cup Vinegar (white or pickling)
- 2.75 cup White Sugar
- 1 cup Water
- 1 tsp Whole Cloves
- 1 tsp Allspice
- 1 tsp Mustard Seeds
- 3 Bay Leaves
- 1 cup White Cooking Wine (or White Port Wine)
- 2 Raw Onions (sliced)
- 1 Lemon (sliced)
