• 1 yellow onion, peeled and small diced
• 3 cloves garlic, finely minced
• 3 Tbsp. all purpose flour
• 4 cups whole milk
• 1 ½ cups shredded sharp cheddar + ½ cup
• 1 ½ cups shredded white cheddar
• ¾ cup shredded smoked Gouda (optional)
• 1 lb. macaroni or another pasta, cooked and cooled
• 3 Tbsp. melted unsalted butter
• 1 cup panko breadcrumbs
