Ingredients

• - 4 slabs cod
• - 8 slices smoked bacon
• - 8 tomatoes, hulled, deseeded and cut into small cubes
• -1 chopped onion
• - 1 bouquet garni (parsley sprig, thyme, bay leaf)
• - 1 finely diced carrot
• - broad beans
• - 4 tablespoons chopped tarragon
• - 2 to 3 tablespoons olive oil
• - salt and pepper
