• 1 cup onion diced
• 1/2 cup celery diced
• 2 garlic cloves minced
• 1/4 cup all-purpose flour
• 2 cups half-and-half
• 1 14 ounce can chicken broth (for a thinner soup use 2 cans)
• 1 tablespoon fresh thyme
• 1 cup shredded carrots
• 1 cup fresh spinach leaves chopped
• 1 cup diced cooked chicken breast
• 2 cups of potato gnocchi from the pasta aisle
• salt and pepper to taste
