• 1⁄2 pound sweet Italian sausage, sliced 1⁄2 inch thick
• 2 tablespoons unsalted butter, quartered
• 1⁄4 cup sour cream
• 1⁄4 cup whole milk
• 1 teaspoon fresh chives, diced 1⁄8 inch long
• 2 teaspoons salt
• 1 teaspoon pepper
• 1⁄4 cup crumbled Gorgonzola cheese
• 1 1⁄2 teaspoons olive oil
• 2 cups spinach
