• 8 oz pasta of choice Paparadelle
• 2 boned quail
• 1 1/2 cup chicken veal; duck; or other light stock
• 1 zucchini small; optional
• 3-4 mushrooms optional
• Olive oil
• 2 shallots diced
• 1 clove garlic diced
• 1/4 cup white wine
• 1/2 stick butter room temperature
• 1/2 tsp thyme fresh
• 1/2 tsp red pepper flakes
• 1/4 cup parmigiana plus more for serving; grated
• Salt
• pepper
• 1/4 cup parsley chopped
