• 4 ears of sweet corn (in husk preferred)
• ¼ cup (60ml) of low-fat sour cream
• ¼ cup (60ml) of light mayonnaise
• 1 lime (juiced)
• 1 garlic clove (grated)
• ½ tsp (2.5ml) of salt
• 1 cup (250ml) cotija or feta cheese (crumbled)
• ½ tsp (2.5ml) of chili powder
• ¼ cup (60ml) of fresh cilantro (chopped)
• 2 Tbsp (30ml) of panko crumbs
