I was not a big fan of the beignets at Cafe Du Monde in New Orleans,they were too plain to me,so I made up this recipe and I like them better.

  • - 2 cups flour
  • - 1/2 t.salt
  • - 1 t. baking powder
  • - 2 eggs,separated
  • - 2/3 c milk
  • - 1/2 c sweet potatoes,cooked and mashed
  • - oil,enough to deep fry
  • - 1/2 c powdered sugar
  • - 1/2 c cinnamon sugar
