Ingredients

• 1 pork loin, centre roast, boneless, about 3 lb / 1.5 kg
• ⅓ cup / 80 mL canola oil
• 1 lemon, juiced
• ⅓ cup / 80 mL minced yellow onion
• 1 tsp / 5 mL EACH ground cinnamon, ground cumin, packed brown sugar and salt
• ½ tsp / 2 mL EACH ground ginger, ground black pepper and red pepper flakes
