• 100g chestnut mushrooms, finely chopped
• 1 shallot, finely chopped
• 200g sausage meat
• 200g mortadella, finely chopped
• 50g parmigiano reggiano cheese, grated
• 1 tbsp fresh parsley, finely chopped
• 2 tsp unsalted butter
• 1 tbsp neutral oil
• 2 garlic cloves, finely chopped
• 1 small glass dry white wine
• 60ml chicken stock
• 250ml double cream
