  • Fish (preferably red snapper or grouper) - 1kg, cleaned and cubed
  • Onions - 2 large, chopped
  • Garlic - 4 cloves, minced
  • Thyme - 1 tablespoon, fresh and chopped
  • Coriander - 2 tablespoons, chopped
  • Tomato paste - 3 tablespoons
  • Coconut milk - 400ml
  • Chili - 1 or 2 as per taste, finely chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - juice of 1
  • Vegetable oil - 3 tablespoons
  • Rice - to serve
