Ingredients

• 144 g gingerbread biscuits (16 biscuits)
• 250 g mascarpone, at room temperature
• 600 ml heavy cream
• 6 tbsp caster sugar
• 1 tbsp chai powder
• 1 tsp vanilla extract
• 300 ml strong black coffee
• 1 tbsp rum
• 4 tsp white sugar
• cocoa powder for dusting
