- 4 x 300-350g beef short rib
- ¾ cup dark soy
- ¾ cup light soy
- 2 tbsp oyster sauce
- 2 x 10g Chinese rock sugar
- 2 whole garlic, tops part cut off
- 3 slices ginger
- ½ tsp Sichuan pepper
- ½ tsp fennel
- 2 star anise
- 1 cinnamon stick
- 1 piece of dried mandarin peel
- 2 cloves (optional)
- 1 tbsp black vinegar
- Peanut oil
- Jasmine steamed rice, to serve
- 4 spring onions, finely sliced to garnish
