• 2 tablespoons olive oil
• 1 1/3 tablespoons butter
• 2 tablespoons chopped flat-leaf parsley
• Salt and coarsely cracked black pepper
• 2 tablespoons unsalted butter
• 1 banana shallot
• 1 teaspoon coarsely cracked black pepper
• 2 3/4 tablespoons brandy
• Scant 1/2 cup white wine
• 1/2 cup chicken stock
• 3 1/3 tablespoons double cream
